Popular salad spot Chop't to open in Park Road Shopping Center

Chop't Creative Salad Company will open a restaurant in Charlotte, marking the first Chop't location outside of New York and the District of Columbia.

The new store will be in the Park Road Shopping Center, according to Restaurant Traffic, a blog run by Charlotte-area real estate brokers. Brian Carver of Cushman & Wakefield, the local real estate representative for Chop't, confirmed the news and location.

Chop't is a local lunch favorite in DC and NYC that serves up "chopped-to-order" fresh salads and wraps in a Chipotle-like assembly line.

Its menu features a slew of chef-inspired creations -- like the Kebab Cobb salad with grilled chicken, feta cheese, red onion, peppers and pita chips chopped over romaine lettuce -- as as well as a create-your-own option. 

According to its website, there are 27 Chop't locations in New York and Washington. 

Co-founders Tony Shure and Colin McCabe, who met at the University of Wisconsin as undergraduates, started Chop't in New York in 2001. 

It wasn't immediately clear when the Charlotte Chop't will open, nor where exactly it'll reside in the Park Road Chopping Center. We'll update this blog with more details as we find out.
